Farfalle With Sausage Pine Nuts Tomatoes Spinach

I made this up as i went along – it is so good! Ingredients are not exact, so use as much or little as you like.

Ingredients

  • Farfalle Pasta
  • Hot Italian Turkey Sausage
  • Olive Oil
  • Garlic
  • Pine Nuts
  • Onion
  • Red Pepper Flakes
  • Sliced Mushrooms
  • Sun-dried Tomatoes
  • Cherry Tomatoes
  • Baby Spinach
  • Parmesan Cheese
  • Salt & Pepper

Instructions

  1. Cook farfalle according to package directions
  2. Drain
  3. Heat olive oil in a large, heavy skillet
  4. Add garlic, and saut until fragrant
  5. Add pine nuts to garlic, and saut 5 minutes
  6. Add onion, saut until soft
  7. Add mushrooms and saut 3 minutes
  8. At this point you may need to add more olive oil if mixture is dry
  9. Add red pepper flakes, sun-dried tomatoes, and cherry tomatoes, and salt & pepper to taste
  10. Saut mixture while sausage is browning, stirring occasionally
  11. In a separate skillet, brown sausage until cooked through
  12. Add sausage to vegetable mixture
  13. Blend well, and saut until mixture is moist but not soupy
  14. Fold spinach into the mixture
  15. Remove from heat once spinach begins to wilt
  16. In a large bowl, combine farfalle and sausage / vegetable mixture
  17. Stir in parmesan cheese
  18. Blend well
  19. Spoon into pasta bowls or plates and top with additional parmesan cheese
