Even people that dislike spinach, love this dish!

Ingredients

  • Frozen Chopped Spinach
  • Butter
  • Flour
  • Dijon Mustard
  • Salt And Pepper
  • Half-and-half Cream
  • Swiss Cheese
  • Parmesan Cheese

Instructions

  1. Set oven to 350 degrees
  2. Butter 1 2-qt casserole dish
  3. In a medium saucepan, melt butter
  4. Mix in flour to make a roux
  5. Add mustard and cream, whisking until thickened
  6. Add swiss cheese, 2 tbsp parmesan cheese and 1 cup half and half cream
  7. Mix well
  8. Remove from heat
  9. Cool 5 minutes
  10. In a bowl, mix together spinach, the cooked cream sauce, salt and pepper to taste
  11. Turn into prepared casserole dish
  12. Top with remaining 2 tbsp parmesan cheese
  13. Bake for 20-25 minutes, or until hot and bubbly
