Per serving (1 piece chicken + 2 tbsp sauce): 199 cal, 6g fat, 8g carb, 0 fiber, 26g protein

Ingredients

  • Crushed Pineapple In Juice
  • Soy Sauce
  • Honey
  • Lime Juice
  • Ginger
  • Shallot
  • Jalapeno Pepper
  • Chicken
  • Cornstarch
  • Water
  • Parsley

Instructions

  1. Combine pineapple, soy, honey, lime, ginger, shallot, and jalapeno in large bag
  2. Add chicken and marinade at least 4 hours
  3. Preheat oven to 375f
  4. Place rack in large roasting pan
  5. Remove chicken from marinade and place on rack
  6. Reserve the marinade
  7. Bake chicken until browned, about 45 minute
  8. Baste with marinade twice during first 25 min of cooking
  9. Stir cornstarch and water in small bowl until smooth
  10. Transfer chicken to platter
  11. Keep warm
  12. Remove rack from roasting pan
  13. Use spoon to skim fat off pan juices
  14. Por pan juices into small saucepan on medium heat
  15. Cook until juices reduce by half
  16. Add cornstarch mixture and cook, stirring constantly, until bubbles and thickens
  17. Stir in parsley
  18. Serve chicken with the sauce
  19. 5 pp yields 1 piece chicken with 2 tbsp sauce
