This is a very tasty meatloaf! I have tweaked this recipe and have adapted it to suit our tastes.. We really like meatloaf, and are always trying new versions.

This is a very tasty meatloaf! I have tweaked this recipe and have adapted it to suit our tastes.. We really like meatloaf, and are always trying new versions.

Ingredients

  • Olive Oil
  • Green Bell Pepper
  • Red Bell Pepper
  • Onion
  • Garlic Cloves
  • Eggs
  • Ground Beef
  • Italian Seasoned Breadcrumbs
  • Parmesan Cheese
  • Worcestershire Sauce
  • Balsamic Vinegar
  • Basil Leaves
  • Italian Parsley
  • Salt
  • Fresh Ground Black Pepper
  • Mozzarella Cheese
  • Marinara Sauce

Instructions

  1. Preheat oven to 350
  2. Heat 1 tablespoons of the olive oil in a medium saute pan over medium heat and add the peppers, onions and garlic
  3. Saute until just soft, remove to a plate and cool
  4. When the peppers and onions are cooled off, combine them and all of the remaining ingredients together except the marinara sauce and the shredded mozzerella
  5. Mix well, but do not overwork the meat
  6. Spray a small rack, with pam, and place on a cookie sheet
  7. Take equal amounts of the meat mixture, and form one half of it into a bottom half
  8. Place on the rack
  9. Evenly distribute the shredded mozzerella onto the bottom half of the meat mixture
  10. Take the remaining meat mixture and form into a top half, and place on top of the mozzerella
  11. And seal up all of the sides, so that the cheese will not run out
  12. Top with the marinara sauce, making sure to evenly coat the top
  13. Bake for about 50 to 60 minutes or until a instant read thermometer registers 160 f
  14. In the middle of the meat loaf
  15. Remove from the oven, and let rest for 5 minutes
  16. Slice and serve
