From 365 ways to cook vegetarian. This sounds like such a great vegetable side dish!

Ingredients

  • Butter
  • Acorn Squash
  • Eggs
  • Seasoned Bread Crumbs
  • Romano Cheese

Instructions

  1. Preheat oven to 350
  2. In oven, melt butter in a 9 by 13 inch baking dish
  3. Set aside
  4. With a sharp knife, carefully cut acorn squash into wedges or rings
  5. Scoop out seeds
  6. Break eggs into a shallow bowl and beat lightly
  7. In another bowl, combine bread crumbs with the romano cheese
  8. Dip each squash piece in beaten egg
  9. Dredge in coating mix
  10. Set in buttered baking dish
  11. Bake until squash is tender and outside turns crispy brown, 25-30 minutes
  12. Turn over with tongs and bake until second side is lightly browned, an additional 5-10 minutes
  13. Serve hot
