Orange Beef Weight Watchers

Faster than delivery. Each serving is 1 cup. I found this recipe in a weight watchers magazine. I have not tried this recipe, but i'm posting it for safe keeping.

Ingredients

  • Scallions
  • Garlic Cloves
  • Fresh Ginger
  • Orange Zest
  • Boneless Sirloin Steak
  • Baby Carrots
  • Reduced Sodium Soy Sauce
  • Orange Juice
  • Cornstarch
  • Cold Water
  • Broth
  • Quick-cooking Barley
  • Sliced Mushrooms
  • Low Sodium Soy Sauce

Instructions

  1. Orange beef:
  2. Spray a large nonstick wok or skillet with nonstick spray and set over high heat
  3. When a drop of water sizzles on it, add the scallions, garlic, ginger, and orange zest
  4. Stir-fry until the scallions soften, about 1 minute
  5. Add the beef and stir-fry until browned, about 3 minutes
  6. Add the sugar snap peas and baby carrots
  7. Stir-fry until crisp-tender, about 2 minutes
  8. Stir in the soy sauce and orange juice
  9. Bring to a simmer and cook 20 seconds
  10. Meanwhile, mix the cornstarch and water in a small bowl until smooth
  11. Add the cornstarch mixture to the wok and cook, stirring constantly, until the sauce is thickened, 30 seconds
  12. Serve with barley pilaf
  13. Point value 3
  14. Barley pilaf:
  15. Bring broth to a boil in a saucepan
  16. Add quick-cooking barley
  17. Simmer, covered, 12 minutes
  18. Spray a skillet with nonstick spray and set over medium-high heat
  19. Add mushrooms and cook until tender
  20. Add the barley and soy sauce
  21. Serves 4 point value 2
