Oat Cake With Coconut Topping Low Fat

Ingredients

  • Nonstick Cooking Spray
  • All-purpose Flour
  • Low-fat Milk
  • Oatmeal
  • Baking Powder
  • Ground Cinnamon
  • Salt
  • Sugar
  • Margarine
  • Unsweetened Applesauce
  • Vanilla Extract
  • Egg
  • Dark Brown Sugar
  • Evaporated Skim Milk
  • Walnuts
  • Shredded Coconut

Instructions

  1. Coat an 8-inch round or square cake pan with cooking spray
  2. Dust with 2 teaspoons flour, and set aside
  3. Preheat oven to 350-degrees
  4. Bring milk to a simmer in a small saucepan
  5. Stir in 1 / 4 cup oatmeal
  6. Bring to a boil, and remove from heat
  7. Spoon mixture into a small bowl
  8. Let cool
  9. Combine 3 / 4 cup flour, baking powder, cinnamon, and salt in a small bowl
  10. Set aside
  11. Combine 1 / 2 cup granulated sugar and 2 tablespoons margarine in a large bowl
  12. Beat at medium speed of a mixer until blended
  13. Add applesuace, vanilla, and egg
  14. Beat until blended
  15. Add flour mixture and oatmeal mixture
  16. Beat until well blended
  17. Pour batter into prepared pan
  18. Bake 25 minutes or until wooden pick inserted into center comes out clean
  19. Remove from oven
  20. Set aside on a wire rack
  21. Combine the brown sugar, evaporated milk, and 1 tablespoon margarine in a small saucepan
  22. Bring to a boil over medium heat, and cook 30 seconds
  23. Stir in 1 / 4 cup oatmeal, walnuts, and coconut
  24. Cook 30 seconds
  25. Spread over cake
  26. Broil 2 minutes or until lightly browned
  27. Let cool on wire rack
