if you want to use margarine, you can decrease the applesauce/apple butter to 3/4 cup and add 4 tablespoons (1/2 stick) of margarine, softened.

Ingredients

  • Brown Sugar
  • Granulated Sugar
  • Apple Butter
  • Egg Whites
  • Nonfat Milk
  • Vanilla
  • All-purpose Flour
  • Baking Soda
  • Ground Cinnamon
  • Salt
  • Ground Nutmeg
  • Quaker Oats
  • Dried Mixed Fruit

Instructions

  1. Heat oven to 350f lightly spray cookie sheets with cooking spray
  2. In large bowl, beat sugars and margarine until well blended
  3. Add apple butter, egg whites, milk and vanilla
  4. Beat well
  5. Add combined flour, baking soda, cinnamon, salt and nutmeg, if desired
  6. Mix well
  7. Add oats and dried fruit
  8. Mix well
  9. Drop dough by rounded tablespoonfuls onto cookie sheets
  10. Bake 10 to 12 minutes or until edges are light golden brown
  11. Cool 1 minute on cookie sheets
  12. Remove to wire rack
  13. Cool completely
  14. Store tightly covered
