Mushroom Pork Medallions

What a wonderful combination. This recipe came from a couscous package, and even people who don't care for pork usually ask for seconds.

Ingredients

  • Pork Tenderloin
  • All-purpose Flour
  • Egg
  • Water
  • Seasoned Dry Bread Crumb
  • Vegetable Oil
  • Fresh Mushrooms
  • Butter
  • Chicken Broth
  • Dry White Wine
  • Dried Thyme Leaves
  • Pepper
  • Milk

Instructions

  1. Cut pork crosswise into 12 slices
  2. Pound to 1 / 4-inch thickness
  3. Dust pork slices lightly with flour
  4. Beat egg and water together
  5. Dip pork into egg mixture, then into bread crumbs
  6. Saut pork in oil, a few pieces at a time, until golden brown and cooked, about 3 minutes per side
  7. Remove pork from the skillet
  8. Keep warm
  9. In same skillet saut mushrooms in butter
  10. Stir in the 2 tbls flour
  11. Cook until flour is very lightly browned
  12. Gradually stir in broth, wine, thyme and pepper
  13. Bring to a boil
  14. Simmer 1 minute
  15. Add milk
  16. Simmer until thickened, stirring occasionally
  17. Spoon mushroom sauce over pork
  18. Serve with couscous or rice
