Multi Grain Carrot Muffins

This is a very moist muffin with medium sweetness. Great for breakfast.

Ingredients

  • Grain Cereal
  • All-purpose Flour
  • Brown Sugar
  • Sugar
  • Baking Powder
  • Ground Cinnamon
  • Ground Ginger
  • Carrot
  • Crushed Pineapple
  • Raisins
  • Eggs
  • Plain Low-fat Yogurt
  • Vanilla Extract

Instructions

  1. Combine cereal, flour, sugars, baking powder, cinnamon, and ginger
  2. Stir in carrots and raisins
  3. In a seperate bowl combine undrained pineapple, eggs, yogurt, and vanilla
  4. Stir into dry ingredients until just moistened
  5. Spoon into muffin tins sprayed with cooking spray
  6. Bake 20-25 minutes in 375 degree oven
  7. Turn out on rack to cool
