Ingredients

  • Fresh Linguine
  • Butter
  • All-purpose Flour
  • Evaporated Low-fat Milk
  • Gorgonzola
  • Salt
  • Black Pepper
  • Baby Spinach

Instructions

  1. Cook pasta according to package directions, omitting salt and fat
  2. While pasta cooks, melt butter in a medium saucepan over medium heat
  3. Add flour
  4. Cook 1 minute, stirring constantly with a whisk
  5. Gradually add the milk, stirring constantly with a whisk
  6. Increase heat to medium-high
  7. Bring to a boil, stirring constantly
  8. Reduce heat
  9. Simmer 3 minutes or until sauce thickens slightly, stirring frequently
  10. Remove from heat, and stir in cheese, salt, and pepper
  11. Combine the sauce, pasta, and spinach, tossing gently to coat
