Ingredients

  • Boneless Skinless Chicken Breast
  • Onion
  • Carrot
  • Garlic
  • Butter
  • Cornstarch
  • Chicken Broth
  • Lemon Juice
  • Salt
  • Instant Rice
  • Frozen Peas

Instructions

  1. In a skillet, cook chicken, onion, carrot, and garlic in butter for 5 to 7 minutes or until chicken is no longer pink
  2. In a bowl, combine cornstarch, broth, lemon juice, and salt until smooth
  3. Add to skillet
  4. Bring to a boil
  5. Cook and stir for 2 minutes or until thickened
  6. Stir in rice and peas
  7. Remove from heat
  8. Cover and let stand for 5 minutes
