Lemon Basil Chicken And Vegetables

This is a quick, simple one skillet chicken meal. This has an asian feel and taste, but my grandkids enjoyed it, nice way to get them to eat their veggies.

This is a quick, simple one skillet chicken meal. This has an asian feel and taste, but my grandkids enjoyed it, nice way to get them to eat their veggies.

Ingredients

  • Brown Rice
  • Boneless Skinless Chicken Breasts
  • Pepper
  • Garlic Powder
  • Onion
  • Frozen Vegetables
  • Water
  • Lemon Basil Stir-fry Sauce
  • Cornstarch

Instructions

  1. Cook rice as directed on package
  2. While rice is cooking, cut chicken into 2 x 1 / 4 inch strips
  3. Spray 12-inch nonstick skillet with cooking spray
  4. Heat over medium-high heat
  5. Add chicken to skillet
  6. Sprinkle with pepper and garlic powder
  7. Stir-fry 4 to 6 minutes or until brown
  8. Add onion
  9. Stir-fry 4 to 6 minutes or until brown
  10. Add onion
  11. Stir-fry 2 minutes
  12. Stir in frozen vegetables and water
  13. Heat to boiling
  14. Reduce heat to medium
  15. Cover and cook 5 to 6 minutes, stirring occasionally, until vegetables are tender
  16. Mix stir-fry sauce and cornstarch until smooth
  17. Stir into mixture in skillet
  18. Heat to boiling, stirring constantly
  19. Boil and stir 1 minute
  20. Divide rice among bowls
  21. Top with chicken mixture
