Kickin Asian Chicken Salad

Ingredients

  • Honey
  • Red Wine Vinegar
  • Shallot
  • Dark Sesame Oil
  • Salt
  • Pepper
  • Firm Tofu
  • Beet
  • Sweet Potato
  • Shiitake Mushroom
  • Gourmet Salad Greens
  • Boneless Skinless Chicken Breast

Instructions

  1. Preheat oven to 400
  2. Place first 8 ingredients in a blender
  3. Process until smooth
  4. Set aside
  5. Leave root and 1 inch of stem on beets
  6. Scrub with a brush
  7. Place beets and sweet potato in a shallow baking dish
  8. Bake at 400 for 45 minutes
  9. Add mushrooms, and bake an additional 15 minutes
  10. Cool to touch
  11. Peel beets and potato
  12. Cut into 1 / 2 inch cubes
  13. Thinly slice mushrooms
  14. Combine beets, potato, mushrooms, greens, and chicken
  15. Drizzle dressing over salad
  16. Toss well
  17. Serve immediately
