Kedjenou Ivory Coast Chicken

This traditional recipe is from the ivory coast, in the western part of africa. This dish is normally served over hot cooked white rice. Feel free to use canned diced tomatoes.

This traditional recipe is from the ivory coast, in the western part of africa. This dish is normally served over hot cooked white rice. Feel free to use canned diced tomatoes.

Ingredients

  • Skinless Chicken Breast Halves
  • Skinless Chicken Legs
  • Olive Oil
  • Onions
  • Garlic Cloves
  • Fresh Ginger
  • Jalapeno Peppers
  • Italian Plum Tomatoes
  • Water
  • Salt
  • Black Pepper
  • Bay Leaf

Instructions

  1. Heat olive oil in dutch oven and add onions
  2. Saute for 3 minutes
  3. Add garlic, ginger and jalapeno pepper
  4. Saute 2 minutes
  5. Preheat broiler
  6. Add remaining ingredients except chicken
  7. Bring to a boil
  8. Cook for 5 minutes then lower heat to simmer
  9. Place chicken on broiler pan coated with cooking spray
  10. Broil 6 minutes on each side or until lightly browned
  11. Add chicken to dutch oven and simmer for 60 minutes
  12. Shred meat, remove bones and serve over hot, white rice
