In the pampered chef catalog – spring/summer 2009 – i am a pc junky! I have two friends who are consultants and i love pc stuff. I can't wait to make this – as soon as my busy schedule will allow!

Ingredients

  • Garlic Cloves
  • Cherry Tomatoes
  • Chicken Broth
  • Penne
  • Dry White Wine
  • Salt
  • Fresh Coarse Ground Black Pepper
  • Basil Leaves
  • Parmesan Cheese
  • Chicken Breasts

Instructions

  1. Spray deep microwaveable baker with olive oil
  2. Slice garlic into baker
  3. Add tomatoes
  4. Cover
  5. Microwave on high 4-5 minutes or until tomatoes begin to burst, stirring after 2 minutes
  6. Crush tomatoes with a spoon or spatula
  7. Add pasta, broth, wine, salt and black pepper
  8. Return baker to microwave
  9. Cover and microwave on high 16-18 minutes or until pasta is tender, stirring after 10 minutes
  10. Meanwhile, coarsely chop basil
  11. Reserve 2 tbsp for garnish
  12. Grate cheese
  13. Garefully remove baker from microwave and remove lid, lifting away from you
  14. Add remaining basil, cheese and chicken to baker
  15. Mix well
  16. Garnish with reserved 2 tbsp basil, additional parmesan cheese and black pepper if desired
