Ingredients

  • Masa Harina
  • Kosher Salt
  • Ground Red Pepper
  • Boiling Water
  • Olive Oil
  • Ground Sirloin
  • Onions
  • Garlic Cloves
  • Poblano Chile
  • Fresh Ground Black Pepper
  • Tomatillos
  • Frozen Baby Lima Bean
  • Butter
  • Baking Powder
  • Queso Fresco
  • Fresh Cilantro
  • Lime Wedges

Instructions

  1. Preheat oven to 400
  2. Combine the masa harina, 1 / 4 teaspoon salt, and ground red pepper, stirring well with a whisk
  3. Add 1 cup boiling water to masa mixture, and stir until a soft dough forms
  4. Cover until ready to use
  5. Heat a 9-inch cast-iron skillet over medium-high heat
  6. Add olive oil to pan
  7. Swirl to coat
  8. Add beef to pan
  9. Cook 5 minutes or until browned, stirring to crumble
  10. Add onion, garlic, poblano chile, remaining 3 / 4 teaspoon salt, and black pepper to pan
  11. Saut 5 minutes or until onion is tender, stirring frequently
  12. Add tomatillos and lima beans to pan, and cook for 2 minutes
  13. Remove from heat
  14. Add butter and baking powder to masa mixture, stirring until smooth
  15. Dollop batter over filling, and spread into an even layer
  16. Cover pan with foil
  17. Bake at 400 for 30 minutes
  18. Uncover and bake an additional 10 minutes or until crust is lightly browned around edges
  19. Remove from oven
  20. Let stand 3 minutes
  21. Sprinkle with crumbled queso fresco and cilantro
  22. Serve with lime wedges
