This recipe is from a land o' lakes advertisement in the april 2007 issue of gourmet magazine. It makes a beautiful, great tasting cake… Perfect for dessert or brunch!

Ingredients

  • Sugar
  • Butter
  • Eggs
  • All-purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Buttermilk
  • Lemon Peel
  • Lemon Juice
  • Powdered Sugar
  • Milk

Instructions

  1. Heat oven to 325 degrees f
  2. Combine sugar and butter in large bowl
  3. Beat at medium speed until creamy
  4. Continue beating, adding eggs one at a time, until well mixed
  5. Reduce speed to low
  6. Gradually add flour, baking powder, baking soda and salt alternately with buttermilk until well mixed
  7. Stir in lemon peel and 1 tablespoon lemon juice
  8. Spread batter into greased and floured 12-cup bundt pan
  9. Bake for 55 to 65 minutes or until toothpick inserted in center comes out clean
  10. Cool 10 minutes
  11. Remove from pan
  12. Cool completely
  13. Glaze:
  14. Stir together powdered sugar, 2 teaspoons lemon juice and enough milk for desired glazing consistency in small bowl
  15. Drizzle over cooled cake
