This recipe would be a fantastic side dish to any type of meat.
Ingredients
- Tomatoes
- Mayonnaise
- Dijon Mustard
- Fresh Flat-leaf Parsley
- Fresh Chives
- Salt & Freshly Ground Black Pepper
- Parmesan Cheese
Instructions
- Preheat the oven to 400 degrees
- Place the tomatoes cut side up in a medium baking dish
- In a small bowl, stir together the mayo, mustard, 1 tablespoons of the parsley, the chives, salt and pepper to taste and 2 tablespoons of the parmesan cheese
- Spoon a heaping teaspoon of the mayo mixture on each tomato and spread to cover
- Sprinkle the tomatoes with the remaining 1 tablespoons cheese
- Bake for 10-12 minutes, or until hot
- Turn on the broiler and broil the tomatoes until brown and bubbling, about 2-3 minutes
- Sprinkle with the remaining 1 tablespoons parsley and serve immediately
