Gingered Pear Chicken Dijon

I got this recipe from a free booklet i picked up at the grocery store, and am very pleased with it. It's easy to prepare, but nice enough for company. Enjoy!

I got this recipe from a free booklet i picked up at the grocery store, and am very pleased with it. It's easy to prepare, but nice enough for company. Enjoy!

Ingredients

  • Pears In Heavy Syrup
  • Boneless Skinless Chicken Breast Halves
  • Olive Oil
  • Green Onions
  • Molasses
  • Fresh Ginger
  • Dijon Mustard

Instructions

  1. Drain pears, reserving liquid, and set aside
  2. Season chicken with salt and freshly ground pepper, if desired
  3. Heat oil in large nonstick skillet over medium-high heat
  4. Add chicken and cook 9-10 minutes, until no longer pink in center
  5. Transfer to platter
  6. Add pear liquid, onions, molasses, ginger and mustard to skillet
  7. Bring to boil, scraping up browned bits from pan
  8. Reduce heat, cook 2 minutes
  9. Stir in pears and heat through
  10. Spoon sauce and pears over chicken
  11. Garnish with green onion strips, if desired
