Ingredients

  • Sugar
  • Butter
  • Molasses
  • Egg
  • Flour
  • Ground Ginger
  • Baking Soda
  • Ground Nutmeg
  • Salt
  • Ground Cloves
  • Nonfat Milk
  • Vanilla Extract
  • Cooking Spray
  • Fat Free Cream Cheese
  • Reduced-fat Cream Cheese
  • Powdered Sugar
  • Lemon Curd

Instructions

  1. Preheat oven to 350
  2. Cake: place 1 / 3 cup sugar and butter in a medium bowl
  3. Beat at high speed for 2 minutes or until well combined
  4. Add molasses and egg
  5. Beat well
  6. Combine flour and next 5 ingredients in a medium bowl
  7. Add flour mixture and milk alternately to sugar mixture, beginning and ending with flour mixture
  8. Stir in 1 teaspoon vanilla
  9. Spoon batter into an 8-inch square pan coated with cooking spray
  10. Bake for 30 minutes or until a wooden pick inserted in the center comes out clean
  11. Cool completely on a wire rack
  12. Frosting: place cheeses, 1 teaspoon vanilla, and 1 / 8 teaspoon salt in a large bowl
  13. Beat with a mixer at medium speed until light and fluffy
  14. Gradually add powdered sugar
  15. Beat at low speed just until blended
  16. Spread frosting evenly over top of cake
  17. Top each serving with lemon curd
