Ginger Glazed Chicken

This is a great recipe from family circle april 2007 issue. I serve it with fried rice and sugar snaps.

Ingredients

  • Boneless Skinless Chicken Thighs
  • Light Soy Sauce
  • Garlic
  • Fresh Ginger
  • Dried Chili Pepper Flakes
  • Vegetable Oil
  • Sugar
  • Fish Sauce
  • Fresh Cilantro

Instructions

  1. Place chicken in a zip lock bag and add the soy sauce, half of the garlic, ginger and chile flakes
  2. Toss to coat
  3. Refrigerate for several hours or overnight
  4. Heat oil over medium-high heat
  5. Remove chicken from bag and discard marinade
  6. Brown chicken on both sides for about 10 minutes
  7. Lower heat and cook an additional 15 minutes until chicken is cooked through
  8. Remove chicken to a plate
  9. In same pan, over low heat, add sugar, the remaining garlic, ginger and chile flakes along with 2 tbsp water
  10. Raise heat to med-high and cook until sugar melts and the sauce becomes thickened, about 2 minutes
  11. Add fish sauce and any juices from the chicken plate
  12. Cook another minute
  13. Return chicken to pan and coat with sauce
  14. Garnish if desired
  15. Enjoy!
