Ingredients

  • Boneless Skinless Chicken Breast
  • Cornstarch
  • Rice Wine
  • Egg White
  • Soy Sauce
  • Hoisin Sauce
  • Chicken Broth
  • Scallions
  • Garlic Cloves
  • Fresh Ginger
  • Vegetable Oil
  • Water
  • Asparagus
  • Shiitake Mushroom
  • Edamame
  • Snap Peas

Instructions

  1. Whisk together the egg white, 1 tbs
  2. Cornstarch and 1 tbs
  3. Rice wine or sherry
  4. Cube the chicken, season with salt and pepper and marinate in this mixture for 1 hour
  5. Make the sauce by mixing 1 tbs
  6. Cornstarch, 1 tbs
  7. Hoisin, 1 tbs
  8. Soy sauce, 1 tbs
  9. Rice wine or sherry and 1 / 2 cup chicken broth
  10. Mix until well combined
  11. Drain excess marinade from the chicken
  12. Heat 1 / 2 tbs
  13. Oil in a wok or deep skillet on med-hi heat
  14. Cook the chicken until opaque
  15. About 2-3 minutes
  16. Remove the chicken from the wok and dump out any excess oil
  17. Put 1 tbs
  18. Water in the hot wok and add the garlic, ginger and scallion
  19. Cook for 30 seconds and add the vegetables
  20. Cook for 3-4 minutes stirring occasionally
  21. Add the sauce to the wok and then add the chicken
  22. Stir to combine
  23. Cook until the chicken is cooked through and the sauce has thickened, 3-4mins more
  24. Serve over rice
