Decorative cookies for the holiday!!

Ingredients

  • Butter
  • Sugar
  • Egg
  • All-purpose Flour
  • Heavy Whipping Cream
  • Honey
  • Sliced Almonds
  • Candied Red Cherries
  • Dried Currant
  • White Candy Coating

Instructions

  1. In a large bowl, cream butter and sugar until light and fluffy
  2. Beat in egg
  3. Gradually add flour and mix well
  4. Refrigerate for 30 minutes or until easy to handle
  5. Roll dough into an ungreased 15-in
  6. X10 in
  7. X1 inches baking pan
  8. Bake at 375 degrees for 7-9 minutes or until lightly browned
  9. Meanwhile, in a large heavy saucepan, combine the sugar, cream, butter, and honey
  10. Cook, stirring occasionally, until a candy thermometer reads 246 degrees
  11. Remove from the heat
  12. Stir in the almonds, cherries and currants
  13. Spread evenly into crust
  14. Bake for 18-22 minutes or just until filling is set
  15. Cool completely on a wire rack
  16. Refrigerate overnight
  17. Remove florentine from pan
  18. With a sharp knife, trim edges of crust
  19. Discard the trim
  20. Cut lengthwise into six strips
  21. Cut each strip into 16 triangles
  22. In a microwave-safe bowl, melt candy coating
  23. Stir until smooth
  24. Dip the short side of each triangle into candy coating
  25. Place on wax paper
  26. Drizzle with additional candy coating
  27. Let stand until set
  28. Cover and store in the refrigerator
