This originally stems from a cook's illustrated recipe. The homemade bbq sauce is replaced with bottled. I don't think the original recipe's sauce was anything special nor worthy of the effort to make. What is worth the effort is the bacon rub.

Ingredients

  • Boneless Chicken Breasts
  • Kosher Salt
  • Sweet Paprika
  • Sugar
  • Smoked Paprika
  • Fresh Ground Black Pepper
  • Bacon
  • Wooden Skewers
  • Barbecue Sauce

Instructions

  1. Toss chicken and salt in large bowl
  2. Cover with plastic wrap and refrigerate for at least 30 minutes and up to 1 hour
  3. Heat gas grill to medium high
  4. While grill heats, pat chicken dry with paper towels
  5. Combine sweet paprika, sugar, smoked paprika and pepper or chipotle powder in small bowl
  6. Process bacon in food processor until a smooth paste forms, 30 to 45 seconds, scraping down bowl twice during processing
  7. Add bacon paste and spice mixture to chicken
  8. Mixing with hands or rubber spatula until ingredients are thoroughly blended and chicken is completely coated
  9. Thread meat onto skewers, rolling or folding meat as necessary to maintain 1-inch cubes
  10. Place kebabs on grill, turning one-quarter turn every 2 to 2 1 / 2 minutes until well browned and slightly charred, about 8 minutes for breasts or 10 minutes for thighs
  11. Brush top surface of kebabs with 1 / 4 cup sauce
  12. Flip and cook until sauce is brown in spots, about 1 minute
  13. Brush second side with remaining 1 / 4 cup sauce
  14. Flip and continue to cook until brown in spots until cooked through, about 1 minute longer
  15. Remove kebabs from grill and let rest for 5 minutes
  16. Serve, passing reserved barbecue sauce separately
