Ingredients
- Bell Peppers
- Tomatoes
- Sweet Corn
- Peas
- Flour
- Baking Powder
- Olive Oil
- Buttermilk
- Salt And Pepper
- Parmesan Cheese
Instructions
- Preheat the oven to 200c / 400f
- Combine flours and baking powder
- Fold in veggies
- In a small bowl combine oil, buttermilk and 2tbs of the parmesan cheese
- Season with salt and pepper to taste
- Add wet ingredients to flour mixture and stir only until just combined
- Fill dough into prepared muffin tins
- Sprinkle with remaining cheese and bake for 15-20 minutes
- Muffis are done when toothpick inserted in the centre comes out clean
