These muffins are very tasty and also full of good for you veggies. What more could you ask for? 😉

Ingredients

  • Bell Peppers
  • Tomatoes
  • Sweet Corn
  • Peas
  • Flour
  • Baking Powder
  • Olive Oil
  • Buttermilk
  • Salt And Pepper
  • Parmesan Cheese

Instructions

  1. Preheat the oven to 200c / 400f
  2. Combine flours and baking powder
  3. Fold in veggies
  4. In a small bowl combine oil, buttermilk and 2tbs of the parmesan cheese
  5. Season with salt and pepper to taste
  6. Add wet ingredients to flour mixture and stir only until just combined
  7. Fill dough into prepared muffin tins
  8. Sprinkle with remaining cheese and bake for 15-20 minutes
  9. Muffis are done when toothpick inserted in the centre comes out clean
