Ingredients

  • Fish Fillet
  • Water
  • Tomato Paste
  • Garlic Cloves
  • White Onion
  • Rice
  • Vegetable Bouillon Cube
  • Mixed Spice
  • Salt & Freshly Ground Black Pepper
  • Butter
  • Pine Nuts
  • Fresh Cilantro

Instructions

  1. In a large pan on medium heat add butter, onions and garlic
  2. Cook until tender
  3. Add arabic spice mix, mix well
  4. Carefully add fish and allow to cook halfway on each side until lightly pink-white
  5. About 1 minute or less on each side
  6. Remove fish / onion mixture and set aside
  7. Add tomato paste and bullion cube to pan, cook a little then add rice and water
  8. Carefully place fish mixture on top
  9. Raise heat to high and allow to come to a full boil, cover and reduce to low
  10. Allow to cook until rice and fish are thoroughly cooked
  11. Depending on the thickness of the fish fillets and the rice type, adjust timing
  12. Once done, arrange fish kabsa on a serving platter and decorate top with cilantro and pine nuts
  13. Serve with a fresh salad
