Fish Cakes Heart Healthy

This is my own recipe. It is a great way to use left over fish. It looks more difficult than it is.

Ingredients

  • Bell Pepper
  • Celery
  • Onion
  • Whole Grain Dijon Mustard
  • Parsley
  • Onion Tops
  • Cumin
  • Paprika
  • Cayenne Pepper
  • White Pepper
  • Oregano
  • Basil
  • Soda Crackers
  • Cornmeal
  • Egg Beaters Egg Substitute
  • Garlic Clove
  • Kosher Salt
  • Extra Virgin Olive Oil
  • Worcestershire Sauce
  • Tabasco Sauce
  • Fish
  • Pam Cooking Spray

Instructions

  1. Saut veggies in olive oil until onions are opaque
  2. Add dry seasonings to saut mix while it is still cooking
  3. Scrape down
  4. Continue about 3 minutes
  5. Remove from heat and let veggies cool
  6. Combine cornmeal and crackers
  7. Add mustard and stir until mixed well
  8. Add veggies
  9. Crumble fish into the mixture
  10. Stir until all of the fish is coated
  11. Add eggbeaters and stir until mixture comes together
  12. Drop 2 heaping tablespoons onto a medium hot griddle or pan after spraying with pam
  13. Turn when set and browned
  14. I spray the pam onto the cakes before turning
  15. Press down gently
  16. When the second side is browned, remove to serving plate
  17. I serve with my home made cocktail sauce
