This is from the fat flush by ann louise gittleman. I took a guess at the time, sorry if it's off!

Ingredients

  • Olive Oil
  • Lean Ground Beef
  • Onion
  • Garlic Cloves
  • Bell Pepper
  • Mushrooms
  • Crushed Tomatoes
  • Reduced-sodium Tomato Juice
  • Fresh Lemon Juice
  • Black Beans
  • Ground Cumin
  • Cayenne
  • Fresh Cilantro
  • Parsley

Instructions

  1. In stockpot, heat olive oil over medium-high setting
  2. Saut meat / poultry until cooked through, about 5 minutes
  3. Drain and set aside
  4. Saut onion, garlic, peppers and mushrooms until soft, about 5 minutes
  5. Stir in remaining ingredients, except cilantro and parsley
  6. Cover and simmer 20 minutes
  7. Stir in cilantro and parsley
  8. Cover
  9. Simmer 10 minutes longer
  10. Store soup in refrigerator up to 5 days
  11. Freezes well
  12. Make 12-14 cups
  13. 1 serving = 3 cups
