Found this in a 2001 taste of home issue. We grow tomatoes and whenever we have an abundance sitting on our counter, it's "fabulous fettuccine" for us.

We grow tomatoes and whenever we have an abundance sitting on our counter, it's "fabulous fettuccine" for us.

Ingredients

  • Bacon
  • Olive Oil
  • Onions
  • Fresh Tomatoes
  • Garlic Cloves
  • Fresh Tarragon
  • Salt
  • Pepper
  • Cayenne Pepper
  • Fresh Parsley
  • Fettuccine Pasta
  • Parmesan Cheese

Instructions

  1. In a skillet, cook bacon until crisp
  2. Remove to paper towels
  3. Drain, reserving 1 tbsp drippings
  4. Add oil and onions to drippings
  5. Saute until tender, about 5 minutes
  6. Add tomatoes and garlic
  7. Simmer uncovered for 5 minutes
  8. Stir in tarragon, salt, pepper and cayenne
  9. Cover and simmer for 20 minutes, stirring occasionally
  10. Meanwhile, cook fettuccine according to package directions
  11. Add parsley to the tomato mixture
  12. Simmer 5 minutes longer
  13. Stir in bacon
  14. Drain fettuccine
  15. Top with tomato mixture
  16. Sprinkle with parmesan cheese
