Deviled Eggs With Olives

I found this in a tapas cookbook i have. A twist on deviled eggs and very delicious. Easy to double or half the recipe.

I found this in a tapas cookbook i have. A twist on deviled eggs and very delicious. Easy to double or half the recipe.

Ingredients

  • Eggs
  • Pimientos
  • Green Olives
  • Mayonnaise
  • Hot Sauce
  • Cayenne Pepper
  • Mustard
  • Salt
  • Pepper
  • Paprika

Instructions

  1. Hardboil the eggs
  2. Put eggs in a pan, cover with cold water, bring to a boil
  3. Reduce heat to low, cover and simmer for 10 minutes
  4. Drain and run eggs under cold water
  5. Let eggs cool
  6. Crack the eggs and remove the shells
  7. Cut the eggs in half and carefully remove the yolks
  8. Rub the yolks through a strainer into a medium-sized bowl
  9. Add the rest of the ingredients to the eggs and mix well
  10. Fill each egg white with the yolk mixture
  11. Using the reserved pimentos and olives, add one of each to top of every egg as decoration
  12. Dust with paprika
