Dauphine Potatoes

Great way to use up left over potatoes.

Ingredients

  • Butter
  • Water
  • Salt
  • All-purpose Flour
  • Eggs
  • Potatoes
  • Ground Nutmeg
  • Black Pepper
  • Panko Breadcrumbs
  • Olive Oil

Instructions

  1. Bring first 3 ingredients to boiling in 1 quart saucepan
  2. Add flour all at once
  3. Stir, cook over low heat for 1-2 minutes or until mixture leaves side of pan and forms ball
  4. Cool slightly
  5. Beat in 1 egg at a time
  6. Peel potatoes, boil and mash until fluffy
  7. Add to chou paste
  8. Mix well
  9. Shape into 1 inch balls
  10. Roll in panko
  11. Fry in olive oil for 2-3 minutes or until browned
  12. Make sure oil is very hot before adding potato balls
  13. Drain on paper towels
