These breasts are spread with honey mustard before being dipped into corn flake crumbs, then baked. Adapted from a weight watchers recipe; points values on their site. Http://bit.ly/11ebowh

Ingredients

  • Nonstick Cooking Spray
  • Light Honey Mustard Dressing
  • Table Salt
  • Black Pepper
  • Fresh Dill
  • Scallion
  • Corn Flake Crumbs
  • Boneless Skinless Chicken Breasts

Instructions

  1. Preheat oven to 425f coat a shallow pan with cooking spray
  2. In a small bowl, combine honey mustard dressing, salt, pepper, dill and scallions
  3. Remove 1 / 3 cup and set aside
  4. Place corn flake crumbs in a shallow bowl
  5. Dip chicken into dressing mixture and then corn flake crumbs
  6. Place in prepared pan
  7. Bake until chicken is golden and no longer pink in center, about 15 minutes
  8. Drizzle remaining dressing mixture over chicken breasts and serve
  9. Yields 1 piece of chicken and about 1 1 / 3 tablespoons of dressing per serving
