This is a great minestrone. I improvise and add pasta or whatever else i have that sounds good at the time. This came from betty crocker creative recipes # 133.

Ingredients

  • Vegetable Oil
  • Garlic Cloves
  • Onion
  • Chicken Broth
  • Tomato Juice
  • Dry Red Wine
  • Dried Basil Leaves
  • Salt
  • Dried Oregano Leaves
  • Pepper
  • Green Cabbage
  • Zucchini
  • Carrots
  • Celery
  • Diced Tomatoes
  • Beans
  • Frozen Chopped Spinach
  • Parmesan Cheese

Instructions

  1. Heat oil in 8-quart dutch oven over medium heat
  2. Cook garlic and onion in oil about 2 minutes, stirring occasionally, until onion is tender
  3. Stir in remaining ingredients except cheese
  4. Heat to boiling
  5. Reduce heat
  6. Cover and simmer 1 hour
  7. Serve with cheese
  8. To refrigerate:
  9. Refrigerate tightly covered no longer than 48 hours
  10. To reheat from refrigerator:
  11. Cover and heat soup to boiling in 8-quart dutch oven over medium heat, stirring occasionally
