I'll bet this recipe is over 75 years old! My husband's grandma made this every year for the holidays. Now his aunt does, she even grinds her own cranberries in her mother's old fashion grinder. I think that is too much work but knock your socks off if you have one! Call me lazy, but i use a food processor. You will need to begin the prep process the 2 nights before.
This is very sweet, personally, i am not crazy about the marshmallows, but they are pretty.

Ingredients

  • Cranberries
  • Orange
  • Granulated Sugar
  • Pineapple Bits
  • Celery
  • Apple
  • Pecans
  • Small Marshmallow
  • Lemon Gelatin
  • Water

Instructions

  1. Grind frozen cranberries with orange
  2. Mix with sugar
  3. Cover and store overnight
  4. If using a food processor, leave chunky
  5. If you over process the cranberries in the food processor, and the cranberries are too wet, remove some of the liquid
  6. The following day:
  7. Mix gelatin with hot water, stir until gelatin is dissolved
  8. Refrigerate and chill until gelatin is moderately set
  9. In the mean time, in a large bowl: snip marshmallows in half
  10. If using large marshmallows snip into several smaller pieces
  11. Add drained pineapple to cranberry – orange mixture
  12. Add marshmallows
  13. Toss to combine
  14. Prepare celery, apples, pecans
  15. Add to above mixture
  16. Once gelatin is moderately jelled, add to all the other ingredients and combine well
  17. Pour into your favorite serving bowl
  18. Refrigerate, preferably all day or overnight
  19. The relish will be thick like a cranberry relish, it will not set up in the bowl
  20. Best if prepared 2 days in advance
