Cran Bran Muffins

The original recipe came from the back of a natural bran package, but i've altered it to my taste.

The original recipe came from the back of a natural bran package, but i've altered it to my taste.

Ingredients

  • Natural Bran
  • Low-fat Buttermilk
  • All-purpose Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Vanilla
  • Dried Cranberries
  • Egg
  • Brown Sugar
  • Apple Butter

Instructions

  1. Preheat oven to 375 and grease 12-cup muffin pan
  2. Mix buttermilk with bran and set aside
  3. Mix together apple butter, brown sugar, vanilla and egg
  4. Add to bran mixture
  5. Sift together flour, baking soda, baking powder and salt
  6. Add to wet ingredients
  7. Stir just until combined
  8. Fold in dried cranberries
  9. Divide batter into 12 muffin cups and bake for 12-15 minutes, or until they test clean
  10. Cool for 5 minutes in pan, then completely cool upside down on wire rack
