Country Style Peppered Pork And Bread Stuffing

Ingredients

  • White Bread
  • Butter
  • Olive Oil
  • Onions
  • Celery
  • Fresh Sage
  • Dry White Wine
  • Ground Pork
  • Fresh Parsley
  • Celery Leaves
  • Eggs
  • Salt
  • Ground Nutmeg
  • Ground Black Pepper
  • Low Sodium Chicken Broth

Instructions

  1. Preheat oven to 350
  2. Spread bread on 2 large rimmed baking sheets
  3. Bake until golden brown, stirring occasionally, about 30 minutes
  4. Transfer to a large bowl
  5. Melt butter with oil in heavy large skillet over medium-high heat
  6. Add onions and celery and saute until tender, about 8 minutes
  7. Add sage
  8. Saute 1 minute
  9. Add wine
  10. Boil until wine evaporates, about 1 minute
  11. Add pork and cook until brown and cooked through, breaking up with back of fork, about 4 minutes
  12. Cool slightly
  13. Stir pork mixture, parsley and celery leaves into bread cubes
  14. Whisk eggs, salt, nutmeg and pepper in medium bowl
  15. Mix into stuffing
  16. To bake stuffing in turkey: loosely fill main turkey cavity with stuffing
  17. Add enough broth to remaining stuffing to moisten lightly
  18. Generously butter glass or ceramic baking dish
  19. Spoon remaining stuffing into dish
  20. Cover with buttered foil, buttered side down
  21. Bake stuffing in dish alongside turkey until heated through, about 30 minutes
  22. Uncover stuffing
  23. Bake until top is just crisp and golden, about 15 minutes
  24. To bake all of stuffing in baking dish: preheat oven to 350
  25. Generously butter a 13x9x2-inch square glass or ceramic baking dish
  26. Add enough broth to stuffing to moisten transfer stuffing to prepared dish
  27. Cover with buttered foil, buttered side down
  28. Bake until heated through, about 30 minutes
  29. Uncover and bake until top is crisp and golden, about 20 minutes longer
