This cake is very authentic and not very sweet- it really does remind my friend from spain of home!

Ingredients

  • Fresh Orange Juice
  • Saffron Thread
  • All-purpose Flour
  • Baking Powder
  • Salt
  • Sugar
  • Egg
  • Egg White
  • Plain Low-fat Yogurt
  • Olive Oil
  • Cooking Spray
  • Orange Marmalade
  • Grand Marnier

Instructions

  1. Preheat oven to 350
  2. Place the juice in a small saucepan
  3. Bring to a simmer over medium-high heat
  4. Remove from heat
  5. Stir in saffron
  6. Let stand 10 minutes
  7. Lightly spoon 2 cups flour into dry measuring cups, and level with a knife
  8. Combine flour, baking powder, and salt, stirring well with a whisk
  9. Set aside
  10. Place sugar, egg, and egg white in a large bowl, and beat with a mixer at medium speed for 5 minutes or until thickened
  11. Add yogurt, beating well
  12. Gradually add oil and juice mixture, beating until well blended
  13. Add half of flour mixture to sugar mixture
  14. Beat just until blended
  15. Repeat procedure with the remaining flour mixture
  16. Spoon batter into a 9-inch round cake pan coated with cooking spray
  17. Bake at 350 for 40 minutes or until a wooden pick inserted in center comes out clean
  18. Cool for 5 minutes in pan on a wire rack
  19. Remove from pan
  20. Cool completely on wire rack
  21. Place cake on a serving platter
  22. Combine marmalade and liqueur in a small saucepan
  23. Bring to a simmer over medium heat, stirring constantly
  24. Remove from heat
  25. Strain through a fine sieve directly onto surface of cake
  26. Discard solids
  27. Spread marmalade mixture evenly over top of cake, allowing excess to drizzle down sides of cake
  28. Yield: 12 servings
