Cider Basted Turkey With Roasted Apple Gravy

Ingredients

  • Apple Cider
  • Calvados
  • Soy Sauce
  • Apple Cider Vinegar
  • Dried Sage
  • Ground Cinnamon
  • Golden Delicious Apples
  • Onion
  • Fresh Thyme
  • Sage Leaves
  • Whole Turkey
  • Butter
  • Water
  • Chicken Broth
  • Cornstarch

Instructions

  1. For turkey:
  2. Position rack in bottom third of oven and preheat to 325f
  3. Combine first 5 ingredients in small saucepan
  4. Add 1 / 2 teaspoon cinnamon
  5. Bring liquid to boil
  6. Set liquid aside
  7. Mix 2 quartered apples, onion, thyme, sage leaves and 1 / 4 teaspoon cinnamon in large bowl
  8. Rinse turkey inside and out
  9. Pat dry
  10. Sprinkle main cavity with salt and pepper
  11. Spoon apple mixture into main cavity
  12. Tuck wing
  13. Place turkey in large roasting pan
  14. Rub turkey breast and legs with butter
  15. Pour half of basting liquid over turkey
  16. Sprinkle with salt and pepper
  17. Roast turkey 30 minutes
  18. Pour remaining basting liquid over turkey
  19. Roast 2 hours, basting frequently with pan juices and adding 1 cup water to pan if juices have evaporated
  20. Add all apple slices to pan juices around turkey
  21. Cover turkey loosely with foil to keep from browning too quickly
  22. Continue to roast until apples are tender, turkey is deep brown and thermometer inserted into thickest part of thigh registers 175f, basting frequently with pan juices, about 1 hour 30 minutes longer
  23. Transfer turkey to platter
  24. Tent loosely with foil
  25. Let stand 30 minutes
  26. For gravy:
  27. Using slotted spoon, transfer apples from pan juices to bowl
  28. Pour pan juices into 4-cup measuring cup
  29. Spoon off fat and discard
  30. Add enough chicken broth to pan juices to measure 4 cups
  31. Transfer broth mixture to large saucepan
  32. Simmer 5 minutes
  33. Add reserved apples
  34. Simmer 2 minutes
  35. Mix apple cider and cornstarch in small bowl
  36. Whisk into gravy
  37. Boil until gravy thickens, about 2 minutes
  38. Season to taste with salt and pepper
  39. Discard mixture from turkey cavity
  40. Serve turkey with gravy
