Chinese Takeout Pineapple Fried Rice

Ingredients

  • Cooked White Rice
  • Peanut Oil
  • Shallots
  • Red Bell Pepper
  • Oyster Sauce
  • Soy Sauce
  • Chinese Rice Wine
  • Fresh Pineapple
  • Ham

Instructions

  1. Break up the cold cooked rice into smaller clumps
  2. Heat a wok or large skillet over medium-high heat until a bead of water sizzles and evaporates on contact
  3. Add oil and swirl to coat bottom
  4. Add shallots and bell pepper
  5. Stir-fry until fragrant and edges of shallots begin to crisp, about 1 minute
  6. Move shallots and bell peppers to the side, creating a well in the middle
  7. Toss in rice
  8. Break up remaining clumps with a spatula
  9. Stir in oyster sauce, soy sauce and rice wine
  10. Stir-fry until rice starts to turn golden, about 2 minutes
  11. Add pineapple and ham
  12. Give everything a few quick stirs so that the ham and pineapple are heated through
  13. Transfer to a large bowl or plate and serve hot
