Chinese Fried Chicken With Mushrooms

From the little cookbook i got from my dad 42 years ago.

Ingredients

  • Broiler-fryer Chicken
  • Soy Sauce
  • Water
  • Salt
  • Sugar
  • Scallions
  • Fresh Ginger
  • Sherry Wine
  • Dried Mushrooms
  • Cornstarch
  • Oil

Instructions

  1. Heat oil in wok until hot
  2. Stir-fry onion, ginger, chicken and sugar 4 minutes
  3. Add soy sauce, sherry and water
  4. Bring to a boil
  5. Cover and simmer 35 minutes
  6. Add mushrooms and salt
  7. Cook 5 minutes more
  8. Stir in cornstarch mixture and stir constantly until thickened
  9. Serve hot
  10. Garnish with chopped scallion or cilantro
  11. Nice with steamed rice
