Ingredients

  • Rotini Pasta
  • Scallions
  • Unsalted Butter
  • All-purpose Flour
  • Milk
  • Salt
  • Black Pepper
  • Monterey Jack Pepper Cheese
  • Corn
  • Chili Powder

Instructions

  1. Heat oven to 350f
  2. Coat an 11x7x2-inch baking pan with nonstick cooking spray
  3. Bring large pot of lightly salted water to a boil
  4. Add rotini and cook 5 minutes
  5. Add scallions and cook an additional 2 minutes
  6. Drain and set aside
  7. In a medium-sized saucepan, melt butter over medium heat
  8. Whisk in flour until smooth
  9. Gradually add milk, whisking constantly, until smooth
  10. Stir in salt and pepper
  11. Bring to a simmer
  12. Cook, simmering 4 minutes
  13. Remove from heat
  14. Add half of the shredded cheese to milk mixture
  15. Whisk until smooth
  16. Stir in corn, then combine in large bowl with pasta and scallions
  17. Pour half into prepared dish
  18. Top with half of remaining cheese
  19. Repeat, ending with cheese
  20. Bake at 350f for 25 minutes
  21. Cool slightly before serving
