Baked Tater Pigs

At the fair we ate tator pigs, sausages cooked in a whole potato with sour cream, butter and salt and pepper. Then the local vendor couldn't sell them any more. This is my adapted recipe. A definite kid pleaser!

At the fair we ate tator pigs, sausages cooked in a whole potato with sour cream, butter and salt and pepper. Then the local vendor couldn't sell them any more. This is my adapted recipe. A definite kid pleaser!

Ingredients

  • Cooked Sausage
  • Tater Tots
  • Saltine Crackers
  • Egg
  • Milk
  • Vegetable Oil
  • Aluminum Foil
  • Paper Towels
  • Pam Cooking Spray

Instructions

  1. In large mixing bowl, mash tator tots
  2. Add saltine crackers
  3. In another bowl, wisk egg, milk and 1 tsp oil
  4. Pour into tator tots and mix with hands or spoon
  5. Wipe off sausage links with paper towels
  6. Take a 6 x 6 piece of foil
  7. Spread a little oil on the foil
  8. Mound two spoonfuls of tator tot mixture
  9. Place a sausage on the mound
  10. Mold the tator tots around the sausage, add more for the top of sausage if needed
  11. Take the foil and press around the sides and top
  12. Do the same with the other sausages
  13. Preheat oven 375
  14. Carefully take off the foil and place on pam sprayed tray
  15. Bake 20 minutes
  16. Remove from oven
  17. Let set 10 minutes
  18. Remove from tray by spatula
  19. Alternate baking method:
  20. Spray pam in muffin cups
  21. Mound and flatten two spponfuls tator tot mixture
  22. Add one sausage broken in small pieces
  23. Cover with tator tot mixture
  24. Press down
  25. Bake 20 minutes
  26. Let set 10 minutes before removing
  27. Remove from muffin pan by spatula
  28. Serve with sour cream or ranch dressing
