Apricot Muffins

Ingredients

  • Fresh Apricot
  • Lemon Juice
  • Shortening
  • Sugar
  • Egg
  • All-purpose Flour
  • Baking Powder
  • Salt
  • Nutmeg
  • Milk
  • Walnuts
  • Granulated Sugar

Instructions

  1. Combine apricot pieces and lemon juice
  2. Cream shortening and sugar, beat in egg and stir in apricots
  3. Sift flour, baking powder, salt and nutmeg
  4. Add to first mixture alternately with milk
  5. Add chopped nuts with last portion of flour
  6. Fill greased muffin tins two thirds full
  7. Sprinkle a little granulated sugar on top of each muffin
  8. Bake about 20 minutes at 350 degrees f
  9. Makes 12 muffins
