Description
This light, tasty chicken dish from bbc good food really is ready in 30 minutes! The fruit really complements the chicken. I made it with dried apricots since that is what i had on hand but you may substitute an equal amount of dried prunes. This dish is wonderful served with mashed potatoes.
Ingredients
- Onion
- Olive Oil
- Garlic Clove
- Boneless Skinless Chicken Thighs
- Apples
- Dried Apricots
- White Wine
- Fresh Parsley
Instructions
- Place a heavy pan over high heat, then add the onion with the oil
- Stir well and cook for 2 minutes, then add the garlic
- Add the chicken, then cook for a few minutes, turning each piece until they all have a little colour
- Add the chopped apples and dried apricots, stir well, pour in the wine, then bring to a boil
- Simmer, covered, for 20 minutes, until the chicken is tender
- Sprinkle with the parsley
