Adapted from "banana muffins with tart lemon icing" makes 18 full size muffins

Ingredients

  • Splenda Granular
  • Unsalted Butter
  • Egg
  • Vanilla Extract
  • All-purpose Flour
  • Baking Powder
  • Baking Soda
  • Skim Milk
  • Bananas

Instructions

  1. Preheat oven to 350f
  2. Place splenda and butter in a large bowl
  3. Cream with an electric mixer until light and fluffy
  4. Add egg and vanilla
  5. Beat until thoroughly mixed
  6. In another large bowl, mix together flour, baking powder and baking soda
  7. Add half of flour mixture to butter mixture
  8. Beat well with mixer
  9. Add milk and remaining flour mixture
  10. Beat until batter is combined and then fold in mashed bananas
  11. Spoon batter into muffin liners about 3 / 4 full
  12. Bake until muffins start to brown and a tester inserted in center of a muffin comes out clean, about 20 to 30 minutes
  13. Allow muffins to cool in pan for about 2 minutes
  14. Remove
