This recipe came from a good friend at work. Great for those of us who need a little more fiber in our diets.

Ingredients

  • All-purpose Flour
  • Quick-cooking Oatmeal
  • Brown Sugar
  • Baking Powder
  • Baking Soda
  • Salt
  • Ground Cinnamon
  • Raisins
  • Crushed Pineapple With Juice
  • Carrots
  • Skim Milk
  • Vegetable Oil
  • Egg Whites
  • Powdered Sugar

Instructions

  1. Heat oven to 400f
  2. Line 12 medium muffin cups withe paper baking cups or lightly grease bottom only of pan
  3. Combine dry ingredients and raisins
  4. Mix well
  5. Add combined pineapple, including the juice, carrots, milk, oil and egg
  6. Mix just until dry ingredients are moistened
  7. Fill muffin cups almost full
  8. Bake 20 to 22 minutes or until golden brown
  9. Let muffins stand a few minutes, remove from pan
  10. Cool 10 minutes
  11. For glaze: combine sugar and milk and mix until smooth
  12. Drizzle evenly over muffins
