All credit to jellyqueen & her recipe #95708 for posting the original glorious morning muffins which are absolutely amazing! I just made a few tweaks to get a bit more nutritional value into them and wanted to share it as another option.

Ingredients

  • Whole Wheat Flour
  • Quick Oats
  • Brown Sugar
  • Baking Powder
  • Baking Soda
  • Salt
  • Ground Cinnamon
  • Raisins
  • Crushed Pineapple In Juice
  • Zucchini
  • Skim Milk
  • Unsweetened Applesauce
  • Egg

Instructions

  1. Preheat oven to 400
  2. Mix all ingredients
  3. Lightly grease / flour 12 muffin cups
  4. Fill cups almost full
  5. Bake 20-22 minutes until golden brown
  6. Let muffins stand for a few minutes, remove from muffin tin, and cool 10 minutes before eating
