Ingredients

  • Whole Wheat Flour
  • Baking Powder
  • Ground Cinnamon
  • Salt
  • Silken Tofu
  • Unsweetened Applesauce
  • Honey
  • Egg
  • Egg Whites
  • Cooked Brown Rice

Instructions

  1. Preheat oven to 375
  2. In a large bowl, whisk together flour through salt
  3. In a processor, blend tofu and applesauce until smooth
  4. Blend in honey, then eggs
  5. Pour over dry ingredients
  6. Add rice and stir
  7. Spoon batter into muffin tins coated with non stick spray
  8. Bake for 18 to 20 minutes
