This is in a taste of home 1999 cookbook it was submitted by heidi harrington i have not made this but it sounded intersting do not know how long it takes so cooking time is really a guess

Ingredients

  • White Clover Blossoms
  • Red Clover Blossoms
  • Rose Petals
  • Sugar
  • Water
  • Powdered Alum

Instructions

  1. Use fresh blossoms
  2. Remove all green stems
  3. Wash clover and rose petals throughly in cool running water
  4. Drain well
  5. Pat dry
  6. Place in large metal bowl and set aside
  7. In large heavy saucepan bring sugar, water and alum to a boil
  8. Stirring constantly
  9. Boil without stirring until candy thermorther
  10. Reaches 220 degree
  11. Remove from heat
  12. Pour the above over clover and wild rose petals
  13. Let stand 45 minutes
  14. Pour through double thickness of cheesecloth
  15. Discard clovers and petals
  16. Pour honey in jars
  17. Store in fridge
  18. Do not use chemically treated plants
